These are a definite fave around here. We eat them whenever I haven't prepared anything for dinner (which will most likely be tonight with the pickling I've got on board). My kids think they are the Bomb so that's a win win in my book.
The rest of the eco-lunch is filled with a hard-boiled hen egg from our backyard birds, an organic orange diced up real nice, a yo-kids yogurt tube, (I like to freeze them so they aid in keeping the lunch cool) some organic applesauce, and a lemon wafer cookie for dessert (fits perfectly in the center).
Don't forget to eat breakfast!
